Mindful Interviews: Emilie Eats

Mindful Interviews is back!! Mindful Interviews is a space where I interview some of the most inspiring and talented people of today’s world that I have had the pleasure to know. Life is so incredibly busy and I think it’s important to take the time to encourage and build each other up, to be mindful in our relationships and in our lives. I hope you get something out of these interviews, as I certainly have.

Today for the premiere of season two I’m introducing a health + foodie blogger that I’ve been following for quite awhile- Emilie from Emilie Eats! I love how real she is and all the delicious food she shares! Plus she’s a cat mom just like me!! I always love seeing her cat insta stories lol. Read on to learn more about this college girl from Louisiana obsessed with fresh food and healthy living!

How did you start Emilie Eats?
I had been reading food blogs since senior year of high school and was interested in starting my own, but I couldn’t since I was moving into a dorm for my freshman year of college (it’s hard to take pretty food pictures in a dorm!). I was connected to a full-time food blogger in the area and interned for her for a summer. While I was learning everything from her, I was building my own blog. EmilieEats.com launched in August 2015 on my first day of my sophomore year!

What does creating this blog/business mean to you?

It really does make me so happy that I get to help people live more healthfully and inspire them to have fun in the kitchen. That’s my mission in life, so being able to do that on such a large platform when I’m only 21 years old is incredible. I’m grateful for it every day and thankful that all the work I’ve done to get here paid off!

How would you define intuitive eating?

To me, intuitive eating is tuning in to what your body wants at a given time. Most of the time I want avocado toast and bean/grain bowls and roasted vegetables, but sometimes I reeeeally want cashew milk ice cream or a greasy meatless burger. I honor those cravings.

It’s not just eating when you’re hungry and stopping when you’re full. To me, it’s not thinking too much about what I’m eating and going with the flow in whatever situation I’m in. For example, enjoying chips and a margarita on an impromptu dinner with friends at a Mexican restaurant!

I love that- honoring those cravings. What does mindfulness mean to you?

I’ll admit that I’m not that great at being mindful. But I’m learning that mindfulness means tuning out whatever thoughts are floating around your head when they’re not important, like when you’re spending time with friends or enjoying a work out class. It’s living in the present moment instead of worrying what happened in the past or what may happen in the future.

Mindfulness is definitely an ongoing process! How do you set yourself up for success?

I plan, but I also expect my plans to be ruined. I have an idea of how I want my day or a certain task to go, but I also know that life happens and things will change.

I really like that! What does self-care look like to you?

My favorite form of self-care is spending time with my closest friends. Studying and blogging all the time leaves me pretty isolated most of the time, so being around the people I love brings me so much joy.

If someone was struggling with clean eating what advice would you give them?

I don’t really use the term clean eating, but if someone was struggling with incorporating more healthy foods in their life, I would encourage them to make meals that look just like the ones they love. For example, they could make spaghetti but try swapping in whole wheat pasta and stirring spinach into the sauce. Or using avocado instead of mayo. Little swaps over time create big changes!

Ohh! I like that you don’t use the term clean eating and use incorporating more healthy foods into their life! What is something you are trying to manifest in your life?

Get into grad school for the fall!

Good luck! What advice would you give someone that’s just starting college?

Put yourself out there to find people who truly value your beliefs and friendship! I didn’t do this, which left me feeling pretty lonely and confused. It may feel awkward at first, but it’ll be worth it to have a group of friends to count on for four years and beyond.

What rituals do you practice every day?

Hot water with apple cider vinegar, morning cup of matcha, playing with Leo, nighttime skincare and updating my bullet journal for the next day

What would be in your perfect smoothie?

Frozen blueberries, frozen spinach, frozen zucchini, Vega Coconut Almond protein powder, ground flax and almond milk. Topped with lots of seeds or peanut butter!


Yumm! What has been bringing you joy lately?

I just started a bullet journal to stay organized, and it’s been really fun to tap into my artsy side to design my spreads and color my journal!

Any favorite recipes?

A simple meal of chickpeas, roasted sweet potato with tahini, and roasted broccoli or Brussels sprouts, all topped with sauerkraut and hummus. Or avocado toast…or vegan pizza…

Favorite type of workout?

Right now, lifting weights.

Favorite thing about being a cat mom?

When he cuddles right under my neck like a scarf when I’m trying to go to sleep. And watching him jump super high when we’re playing! Basically, everything. <3

Awhh agreed lol! Being a cat mom is the best. Introvert or extrovert?

Extroverted introvert!
